Ingredients
- Proteins: 1 lb (450 g) smoked or fresh sausages (such as pork, chicken, or turkey), sliced into thick rounds
- Vegetables & Fruit: 4 celery stalks, sliced, 2 medium apples (Granny Smith or similar), cored and chopped, 1 large onion, diced, 2 medium carrots, sliced, 2 cloves garlic, minced
- Pantry & Liquids: 2 tbsp olive oil, 2 cups (480 ml) low-sodium chicken or vegetable broth, 1 tbsp Dijon mustard, 1 tbsp apple cider vinegar, 1 tsp dried thyme, 1/2 tsp salt (or to taste), 1/4 tsp black pepper
- Optional Garnishes: Fresh parsley, chopped
Instructions
- Step 1:
- Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add the sausage slices and cook for 5 7 minutes, turning occasionally, until browned. Remove sausage with a slotted spoon and set aside.
- Step 2:
- In the same pan, add onion, carrots, and celery. Sauté for 5 minutes until slightly softened.
- Step 3:
- Add garlic and cook for 1 minute until fragrant.
- Step 4:
- Stir in the apples and return the sausage to the pan.
- Step 5:
- Add broth, Dijon mustard, apple cider vinegar, thyme, salt, and pepper. Stir well to combine.
- Step 6:
- Bring to a gentle simmer, cover, and cook for 20 minutes, stirring occasionally, until vegetables are tender and flavors meld.
- Step 7:
- Taste and adjust seasoning as needed.
- Step 8:
- Serve hot, garnished with chopped parsley if desired.
