# Method:
01 - Preheat oven to 425°F. Line a large rimmed sheet pan with parchment paper or foil to ensure easy cleanup.
02 - In a large bowl, mix olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice. Add chicken pieces and toss thoroughly to coat evenly.
03 - Place seasoned chicken on one side of the prepared sheet pan. Spread bell peppers, red onion, cherry tomatoes, black beans, and corn evenly on the other side. Drizzle vegetables with olive oil and season lightly with salt and pepper.
04 - Roast in the preheated oven for 25 to 30 minutes. Stir vegetables halfway through cooking. Continue until chicken reaches an internal temperature of 165°F and vegetables are tender with slight charring.
05 - While roasting is underway, cook rice and prepare desired toppings such as shredded lettuce, cheese, salsa, sour cream, avocado, cilantro, and lime wedges.
