01 - 1 1/2 cups unsweetened almond milk
02 - 1/3 cup chia seeds
03 - 2 tablespoons maple syrup
04 - 1 teaspoon pure vanilla extract

05 - 1 teaspoon matcha powder
06 - 1/4 teaspoon natural peppermint extract
07 - 2 to 3 drops natural green food coloring (optional)

08 - 2 tablespoons dairy-free yogurt

# Method:

01 - Whisk almond milk, chia seeds, maple syrup, and vanilla extract in a medium bowl or large jar.
02 - Mix matcha powder, peppermint extract, and green food coloring with 2 tablespoons of the chia mixture until smooth.
03 - Stir the matcha-mint mixture into the remaining pudding base until evenly blended and green.
04 - Cover and refrigerate for at least 4 hours or preferably overnight to thicken.
