08 - 1 tbsp olive oil

# Method:

01 - Pat steak cubes dry with paper towels and season evenly with kosher salt and black pepper.
02 - Heat a large skillet over high heat, add olive oil, and swirl to coat the surface.
03 - Arrange steak cubes in a single layer without overcrowding, sear for 2 minutes without stirring, then turn to brown all sides for an additional 2 to 3 minutes for medium-rare. Remove steak bites and cover loosely.
04 - Reduce heat to medium-low, add butter to the skillet, and melt. Add minced garlic and sauté for 30 seconds until fragrant without browning.
05 - Return steak bites to the skillet, toss to coat evenly with the garlic butter sauce, then sprinkle with chopped parsley and crushed red pepper flakes, if using.
06 - Serve immediately, spooning pan sauce over the steak bites.

# Expert Advice:

01 -
  • They come together in twenty minutes but taste like they took all day
  • The garlic butter sauce is good enough to drink
02 -
  • Dry meat equals better sear so do not skip the paper towel step
  • Crowding the pan steaks the meat instead of searing it so work in batches if needed
03 -
  • Let the steak sit at room temperature for twenty minutes before cooking
  • Have your parsley chopped before you start cooking because the sauce waits for no one
