I first made these flavor mash-up sandwiches for a weekend gathering and they were the hit of the party. Everyone loved how every bite was bursting with different textures and tastes.

Ingredients

  • Meats: 100 g Genoa salami, sliced, 100 g smoked turkey breast, sliced, 100 g mortadella, sliced, 100 g hot capicola, sliced
  • Cheeses: 100 g provolone cheese, sliced, 50 g fresh mozzarella, diced
  • Vegetables: 1 cup iceberg lettuce, finely shredded, 1 cup cherry tomatoes, quartered, 1/2 small red onion, thinly sliced, 1/2 cup pepperoncini peppers, sliced, 1/2 cup roasted red peppers, chopped, 1/4 cup pitted black olives, sliced, 1/2 cucumber, diced
  • Condiments & Extras: 4 Italian hoagie rolls or ciabatta rolls, split, 1/2 cup mayonnaise, 2 tbsp red wine vinegar, 2 tbsp extra-virgin olive oil, 1 tbsp Dijon mustard, 1 tsp dried oregano, 1/2 tsp garlic powder, salt and black pepper, to taste

Instructions

Chop Ingredients:
Chop all meats and cheeses into bite-sized pieces.
Combine:
In a large mixing bowl, combine the chopped meats, cheeses, lettuce, tomatoes, red onion, pepperoncini, roasted red peppers, olives, and cucumber.
Make Dressing:
In a small bowl, whisk together mayonnaise, red wine vinegar, olive oil, Dijon mustard, oregano, garlic powder, salt, and pepper to create the dressing.
Toss:
Pour the dressing over the chopped mixture and toss thoroughly until everything is well coated.
Prepare Rolls:
Split the rolls and, if desired, lightly toast them.
Assemble:
Pile the chopped sandwich filling generously onto each roll.
Serve:
